Rules That Actually Matter

RICK LEIGH — BACKYARD, DAWN COOK, YEAR-ROUND

The pitmaster

Twenty years of arguing with fire

Rick Leigh started smoking meat in a converted oil drum because a real offset smoker was three years of saving away. The drum taught him more about heat management than any expensive rig ever could.

Rick Leigh BBQ LLC exists to write down what actually happens at the pit, not the polished version. Bad cooks, wasted briskets, and the small adjustments that eventually added up to something worth sharing.

"You can't rush a brisket, and you can't rush learning how to cook one. Both take about the same amount of stubbornness."
